How to make a pumpkin spice latte and pumpkin spice cupcakes

Fall has begun, you know what that means. There is pumpkin spice everywhere, but not everyone can afford $4.45 – 5.45 for a cup of coffee or pumpkin spice desserts. Here is how you can make your own at home here:

For the pumpkin spice latte:
Whisk together ½ cup of milk, 1 tbs of white sugar, 1 tbs of pumpkin puree, 1 teaspoon of pumpkin pie spice, and ½ teaspoon of vanilla extract in a small saucepan.

Simmer for 5 minutes.

Whisk in another ½ cup of milk.

Pour your milk mixture through a fine-mesh sieve to remove pulp. Return you milk mixture to the saucepan and simmer for 2 minutes.

Add espresso and whisk until foamy. Then you’re all done!

Preheat your oven to 350 degrees

In a large bowl, cream ¾ cups butter and 2 ½ cups of sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add pumpkin.

Combine ⅔ cups flour, 1 tablespoon pie spice, 1 teaspoon baking powder, 1 teaspoon ground cinnamon, ¾ teaspoon salt, ½ teaspoon baking soda and ½ teaspoon of ground ginger; add to creamed mixture alternately with buttermilk, beating well after each addition.

Fill paper-lined muffin cups three-fourths full. Bake 20-25 minutes or until a toothpick inserted in the center comes out clean.

Cool 10 minutes before removing from pans to wire racks to cool completely.

Top with buttercream and you’re all set.
